What You Need to Know
During bulk fermentation, lactic acid bacteria such as Lactobacillus brevis and Lactobacillus plantarum metabolize pentosans and starches, producing lactic and acetic acids that lower pH and inhibit yeast activity. Yeast ferments sugars to CO₂ and ethanol, creating gas bubbles that are retained in the viscous rye matrix, resulting in a moist, open crumb.
