What You Need to Know
The flour provides a dry surface for egg adhesion, while the egg acts as a binder that holds the breadcrumb layer in place. During frying at 160–180 °C, the Maillard reaction between amino acids and reducing sugars (140–165 °C) generates melanoidins and volatile flavor compounds, imparting the characteristic brown color and toasted aroma.
