What You Need to Know
During fermentation, Lactobacillus species produce lactic and acetic acids while yeast generates CO₂ and ethanol. The acids lower the pH to 3.5–4.6, promoting starch gelatinization and a weak protein network in rye, while malted barley supplies β‑amylase to release fermentable sugars.
