Rapid cooling at >10,000 °C/min freezes the puree into an amorphous ice, preventing crystalline ice formation that would damage cell walls and cause enzymatic browning. The vitrified matrix locks in sugars and pigments, limiting Maillard reactions and maintaining a smooth mouthfeel.
