What You Need to Know
During fermentation, halophilic lactic acid bacteria lower the pH to 4.5–5.0, while proteolytic Bacillus subtilis releases free amino acids, especially glutamic acid. Simultaneously, alginate is depolymerized into soluble oligosaccharides, and inosine monophosphate (IMP) is enriched, synergizing with glutamate to produce a pronounced umami flavor.
