What You Need to Know
During frying the dough’s gluten network develops at 60–70 °C, while the Maillard reaction between reducing sugars and amino acids occurs at 140–165 °C, producing a crisp exterior and a chewy interior. The oil temperature must be tightly controlled to prevent excessive oil absorption or uneven browning.
