What You Need to Know
During steaming, the steam penetrates the dough, raising the internal temperature to 60–70 °C where wheat starch gelatinizes, forming a soft, cohesive matrix. Simultaneously, meat proteins denature, creating a uniform, moist filling. The process also ensures pathogen kill while preserving the delicate flavors of the dough and filling.
