What You Need to Know
During frying, starch gelatinization occurs between 60–70 °C, allowing the dough to set and trap steam for a light interior. The Maillard reaction between reducing sugars and amino acids begins around 140 °C, producing brown crust and complex flavor compounds. Caramelization of sugars above 170 °C further enhances the golden color and nutty aroma.
