What You Need to Know
During smoking, the tannins and phenolic compounds in oak bark undergo pyrolysis, generating a complex mixture of phenolic aldehydes and acids that act as antioxidants and flavor precursors. The mild heat (93–121 °C) keeps the bark from combusting, allowing controlled release of smoke while preventing the formation of harmful acrylamide precursors. The resulting smoke penetrates the food matrix, stabilizing fats and proteins and imparting a characteristic woody, tannic aroma.
