The methoxyl substitution (DS 1.6-2.0) determines its solubility and gel strength. In noodles, it complexes with starches (rice, tapioca) to prevent disintegration.
This technique allows gluten-free noodles to achieve the 'al dente' texture impossible with pure starch formulations. Chefs use varying methylcellulose grades (A4M, A15LV) to control mouthfeel. The noodles exhibit unique thermal behavior - firm when hot but softening as they cool below gelation temperature.
