What You Need to Know
During fermentation, lactic acid bacteria such as Lactobacillus plantarum convert fermentable sugars into lactic acid, while yeasts like Saccharomyces cerevisiae produce ethanol. The resulting acidification lowers the pH from ~6.5 to 4.5–5.0, reducing antinutrients such as phytates and improving digestibility.
