What You Need to Know
During baking, tapioca starch gelatinizes around 70–80 °C, forming a viscoelastic network that traps steam. Simultaneously, egg and cheese proteins denature and coagulate, providing structural integrity. At higher temperatures (140–165 °C) Maillard reactions between amino acids and reducing sugars produce the characteristic golden crust and complex aroma.
