What You Need to Know
During curing, salt penetrates the pork belly, drawing out water and lowering water activity below 0.85, which inhibits bacterial growth. The salt also induces protein denaturation, creating a firm matrix that traps flavor compounds. Subsequent drying at 30–35 °C and 30–40 % RH concentrates the flavor while further reducing moisture to 15–20 %, yielding a shelf‑stable product with minimal Maillard browning.
