The process relies on lactic acid bacteria converting sugars to lactic acid, dropping the pH to 4.5–5.0 and thereby inhibiting Clostridium botulinum spores. Salt concentration creates osmotic pressure that selects for LAB while suppressing spoilage organisms, and the anaerobic, cool environment modulates the rate of acidification and flavor development.
