What You Need to Know
Liquid nitrogen immersion vitrifies herb tissues at −196 °C, preventing ice crystal growth and preserving phenolic antioxidants. Subsequent lyophilization under 0.1–0.5 mbar and −80 °C shelf temperature sublimates ice rapidly, reducing drying time to 2–4 h while maintaining microstructure.
