What You Need to Know
Homofermentative lactic acid bacteria such as Lactobacillus plantarum convert cabbage sugars into lactic acid, lowering the pH to 4.0–4.5 and preserving the vegetable. The acidification denatures proteins and gelatinizes starches, improving texture and generating vitamins B2, B12, C and bioactive peptides.
