What You Need to Know
The process melts cocoa butter to 40–50 °C, cools to 26–28 °C to nucleate stable Type V crystals, then reheats to 31–32 °C to maintain viscosity before setting. Precise ±0.1 °C control prevents the formation of Type I/II crystals that cause bloom and dull sheen.
