What You Need to Know
By sealing food at 55–60 °C for 1–4 h, the vacuum prevents evaporation of volatile compounds such as aldehydes, esters, and terpenes. Encapsulation agents—gelatin, pectin, or alginate—form semi‑permeable films that slowly permeate these aromatics, while the mild temperature preserves protein structure and prevents denaturation that would otherwise degrade texture and flavor.
