During steaming, water vapor at ~100 °C penetrates the porous bamboo, transferring heat gently and preventing over‑cooking. Lignin in the bamboo undergoes mild pyrolysis, releasing phenolic aldehydes that contribute a characteristic smoky note. The high humidity keeps moisture inside the food, reducing protein denaturation and preserving nutrients.
