What You Need to Know
During steaming, the steam temperature (~100 °C) gelatinizes the starch in masa, converting amylose and amylopectin into a cohesive matrix that traps moisture. The internal temperature of the tamale rises to 70–80 °C within 15–20 min, ensuring complete protein denaturation in the filling while maintaining moisture. Adequate steam and humidity (>80 %) are essential to prevent incomplete gelatinization and crumbly texture.
