The cold batter (<5 °C) inhibits gluten development, while the high oil temperature (170–180 °C) triggers the Maillard reaction, producing melanoidins that give the characteristic golden color and flavor. A double-fry—first at 170 °C for 2–3 s, then at 190 °C for 1–2 s—creates an extra‑crisp outer shell while preserving a tender interior. Adding a pinch of baking soda or vinegar introduces a mild alkaline environment that promotes batter expansion and browning.
