preheat oven to 400 degrees f. lightly grease a cookie sheet with nonstick cooking spray and set aside. in a large mixing bowl, stir flours, soda and sugar together until well-blended. cut cold butter into chunks and stir into the dry ingredients. break butter into small pieces the size of peas or smaller with a pastry cutter or forks. (you could also use a stand mixer with the paddle attachment.) stir in milk until incorporated. drop by the tablespoonfuls onto the prepared baking sheet. you can make 12 small or 8 to 10 large biscuits. bake 1215 minutes or until bottoms are lightly golden brown. serve warm with butter.
