Preheat oven to 375°F. Grease a 8 x 4 inch loaf pan. Add bacon and onion to a medium nonstick frying pan and cook and stir 5 mins or until bacon is crisp and onion is soft. Remove and reserve 1/4 of the mixture. Add spinach and oregano to pan and cook and stir until spinach is just wilted. Remove from pan and cool slightly. For the batter, sift flour and salt into a large bowl. Make a well at center. Add oil, egg and milk and stir until just combined. Don't overmix. Gently stir in spinach mixture and 2/3 of the feta. Spoon mixture into prepared pan. Top with remaining bacon mixture and feta. Bake 40-45 mins, or until a skewer inserted in the center comes out clean. Cool in pan 5 mins. Turn out onto a wire rack to cool slightly. Serve with butter.
