Fry onions gently in butter, but not brown. Stir in flour and let cook a few minutes before adding salt and pepper to taste. Add stock; stir and simmer 15 minutes. Fry bread in butter; place in ovenproof earthenware tureen or individual soup bowls and pour in hot soup. The bread will rise to the top. Sprinkle with a thick layer of the grated cheese. Place in preheated 375° oven until cheese becomes stringy. Serve immediately. Serves 4.
