In a mini food processor add garlic, olive oil and arugula, Pulse a few times until blended. Add lemon, salt and pepper and pulse another couple times. Add walnuts and parmesan cheese and pulse another couple times. I like some texture in the pesto so I don't completely pulse the walnuts to oblivion, but you can blitz until you have reached the consistency that works for you. Done! Recipe yields about half a cup.
