Put the oil in a non stick pan large enough for 4 eggs Add the chopped onions and stir for 2 minutes and add the chopped garlic As the onions become transparent add the tomatoes and stir for 5 minutes. Add all the spices to the pan and stir for 2 minutes and add the eggs, salt and chopped coriander and stir well. Garnish with some coriander or tomatoe ketchup. Serve with plain or toasted slice bread.
