1 c. oil
3 Large eggs
2 c. flour
1 teaspoon cinnamon
1 teaspoon salt
2 teaspoon baking soda
1/4 teaspoon baking pwdr
1 teaspoon vanilla
2 c. shredded zucchini
1 sm. carrot, shredded

Beat together sugar, oil, and Large eggs in large bowl or possibly food processor. Beat in flour, cinnamon, salt, baking soda, and pwdr and vanilla. Beat 1-2 min till well mixed. Mix in zucchini, carrot, oats, and nuts; mix well. Pour into 15 x 10 x 1 inch pan (jelly roll pan). Bake at 350 degrees for 15-20 min. Make frosting by beating all ingredients till smooth. Set aside. Cold bars; frost. Cut into bars. Yields 3 dozen.
