Preheat oven to 350°. Butter an 8-inch square baking dish. In a mixing bowl, beat 4 tablespoons of the butter with the sugar and honey. Add the nuts, raisins and spices. Mix well. Remove the apple cores, but do not cut all the way through the bottoms. Stuff each apple with nut mixture and place in the baking dish. Rub the skin of each apple with the remaining 1 tablespoon of butter and sprinkle any remaining nut mixture over top. Bake until the apples are soft, 30 to 40 minutes. Serve warm with vanilla ice cream. Serves six.
