In mixing bowl, work butter until creamy. Add sugar and work until smooth. Beat eggs slightly and stir in. Mix flour, baking powder and salt together and stir until batter is smooth. Preheat oven to 425°. Peel apples and slice into 9-inch baking dish. Sprinkle with cinnamon-sugar mixture. Spread batter over apples and bake 10 minutes. Turn oven temperature down to 350° and bake 20 minutes or until apples are tender (test with toothpick). Serve warm or cold, plain or with cream, whipped cream or ice cream. Serves 6.
