During heating, the starch granules in the masa gelatinize, releasing amylose and amylopectin, which increase viscosity. Simultaneously, reducing sugars undergo Maillard reactions and caramelization at higher temperatures, contributing to flavor and color. Fermentation by wild yeasts can produce organic acids that lower pH and enhance complexity.
