During fermentation, lactic acid bacteria metabolize residual sugars to lactic acid, lowering pH to 4.3–4.6 and inhibiting spoilage microbes. Salt concentration (5–10 % NaCl) and temperature (15–20 °C) modulate microbial activity, while ascorbic and citric acids stabilize color and acidity. Proteolysis of eggplant proteins generates peptides that enhance umami and smoky notes.
