Technical
During fermentation, starch is hydrolyzed to glucose and maltose, which are metabolized by homofermentative lactic acid bacteria and yeast. Lactic acid bacteria convert sugars to lactic acid, while yeast produce ethanol and CO₂, creating leavening and acidity. The resulting acids also hydrolyze phytate complexes, increasing niacin bioavailability.
