Dabo kolo is a traditional Ethiopian grain snack roasted on an open fire to achieve Maillard browning and caramelization.
Technical
The roasting process initiates Maillard reactions between reducing sugars and free amino acids at 200–250 °C, producing a golden‑brown crust and complex flavor compounds. Caramelization of starch-derived sugars occurs at 140–160 °C, while minor lipid oxidation contributes to aroma. Spices such as berbere and salt can lower browning temperature by altering pH and providing additional nitrogenous compounds.
