Technical
During curing, salt draws out moisture and creates a low‑water‑activity environment that inhibits pathogens. Sodium nitrite reacts with myoglobin to produce nitrosylmyoglobin, giving the characteristic pink color and acting as an antioxidant. Enzymatic proteolysis and Maillard reactions develop the product’s flavor, aroma, and brown pigments.
