Description
Electrospinning of protein solutions produces nanofibrous edible films with tunable mechanical and barrier properties.
Technical
In the process, a high-voltage electric field induces a charged jet from a polymer solution, which elongates and undergoes rapid solvent evaporation. The resulting protein chains align along the jet axis, forming solid nanofibers that entangle into a coherent film. Adjusting solution concentration, voltage, flow rate, and collection distance controls fiber diameter and film properties.
