Ethiopian lava rock grilling is a traditional method of cooking food on heated volcanic rock slabs.
Technical
The high temperatures (~400–500 °C) cause rapid Maillard browning and caramelization of surface sugars, while conduction from the rock keeps the interior moist. The process also generates volatile aromatic compounds that impart a smoky, charred flavor.
