These bacteria ferment fish proteins via heterolactic pathways, producing lactic acid, acetic acid, ethanol, and modest amounts of biogenic amines. The resulting acidification lowers the pH to 4.2‑4.8, stabilizing the product and imparting characteristic sourness.
