Technical
During fermentation, lactic acid bacteria such as Lactobacillus plantarum and yeasts like Saccharomyces cerevisiae metabolize sugars to produce lactic acid, ethanol, and CO₂, which lower the pH to 4.5–5.0. The acidic environment preserves the sauce while allowing capsaicin to remain largely stable. The process also generates volatile compounds that contribute to the sauce’s characteristic aroma and complexity.
