Description
Kava root is ground and macerated in cold water to extract lipophilic kavalactones, then whisked and served communally in a single gulp.
Technical
The extraction relies on the solubility of kavalactones in cold aqueous media; mechanical grinding increases surface area, while prolonged maceration at 20–25 °C allows diffusion of these lipophilic compounds into the water. Heating above 50 °C degrades kavalactones and releases bitter sesquiterpenes, reducing potency.
