Technical
The extreme temperature drop causes water in the puree to crystallize almost instantaneously, limiting ice crystal growth to less than 10 µm. This minimizes cell rupture and preserves the smooth mouthfeel. Additionally, the rapid temperature change inactivates polyphenol oxidase, preventing enzymatic browning.
