Description
Traditional Southern African pit cooking using hot stones to slowly cook meat over a bed of heated stones.
Technical
The method relies on conduction from stones heated to 200–300 °C, with the surrounding soil maintaining a stable 80–120 °C environment. Collagen in the meat denatures into gelatin over 30–60 minutes, preserving moisture, while the surface Maillard reaction at ~140–165 °C forms a brown crust and complex flavor compounds.
Science
Primary Reaction
