Technical
During 24–48 h at 20–30 °C, Lactobacillus plantarum and Pediococcus pentosaceus metabolize proteins and sugars to lactic acid, lowering pH to 4.5–5.0. This acidification inhibits spoilage microbes and drives the formation of volatile compounds such as acetaldehyde, diacetyl, and ethyl acetate that contribute buttery, nutty, and umami notes.
