Proteolytic enzymes such as peptidases and aminopeptidases break down proteins into peptides and free amino acids, notably glutamate, which imparts umami. Concurrently, nucleoside monophosphates like IMP and GMP are released, synergistically amplifying the umami perception. The process is temperature and time dependent, with optimal ranges of 20–35 °C and 3–14 days to maximize flavor while preventing spoilage.
