Simmering at 85‑95 °C for 20‑30 min denatures fish muscle proteins, releasing amino acids and peptides that contribute to umami flavor. The coconut milk contains phospholipids that act as natural emulsifiers, keeping the palm oil and water phase mixed; this emulsion remains stable as long as the temperature stays below the coagulation point of coconut proteins (~100 °C). Acidic tomatoes and lime lower the pH to 4.5‑5, which slows lipid oxidation of dendê oil and further stabilizes the emulsion during cooking.
