Moqueca is a Brazilian seafood stew cooked gently at 80–90 °C to preserve delicate proteins while coconut milk and citrus create a stable emulsion.
Technical
The gentle simmer denatures seafood proteins without overcooking, while the coconut milk provides emulsified fat that stabilizes the broth. Acidic citrus lowers pH to 4.5–5.0, preventing protein aggregation and curdling of the milk. Salt at 1–2 % inhibits bacterial growth during the short cooking period.
