Nam Pla is a traditional Southeast Asian fish sauce produced by fermenting minced fish with salt at ambient temperatures over several months.
Technical
During fermentation, halophilic Bacillus subtilis and associated Pseudomonas spp. hydrolyze fish proteins into peptides and free amino acids, notably glutamic acid, while phospholipids release nucleotides such as inosine monophosphate and guanosine monophosphate. The resulting proteolysis and subsequent acidification by lactic acid bacteria lower the pH to 4.5–5.0, creating a stable, low‑pH, high‑salt environment that suppresses spoilage organisms and concentrates umami flavor. Volatile sulfur compounds and furanol derivatives contribute to the characteristic fishy aroma.
