Nixtamalization is an alkaline hydrolysis process that transforms dried corn kernels into masa by breaking down hemicellulose, solubilizing proteins, and releasing bound niacin.
Technical
During the high‑temperature soak, hydroxide ions cleave hemicellulose linkages and disrupt protein–cell wall interactions, liberating soluble proteins and free niacin. The alkaline medium also precipitates calcium as calcium hydroxide, which is absorbed into the kernel, raising its calcium content. The resulting masa exhibits improved rheology, reduced mycotoxin levels, and extended shelf life due to the elevated pH.
