Description
Polish sauerkraut is produced by lactic acid bacteria fermenting shredded cabbage in a 2–3 % salt brine.
Technical
The homofermentative LAB, primarily Lactobacillus plantarum, convert fermentable sugars in cabbage into lactic acid, lowering the pH to 3.5–4.0. This acidification, along with the production of B‑group vitamins and flavor compounds such as diacetyl, preserves the cabbage for months while imparting a tangy, slightly sweet profile.
