Technical
The elevated pressure raises the boiling point, accelerating hydrolysis of proteins and gelatinization of starches. This process also reduces anti-nutritional lectins and partially degrades phytic acid, enhancing mineral bioavailability. The rapid heat transfer shortens cooking time compared to conventional boiling.
