Description
Pryanik is a Russian spiced honey‑bread baked at moderate temperatures to develop Maillard browning and aromatic volatiles.
Technical
During baking, reducing sugars from honey and molasses undergo Maillard reactions with amino acids, forming brown pigments and flavor compounds. Simultaneously, Strecker degradation generates key aroma molecules such as 2‑acetyl‑1‑pyrroline and furfural. Sodium bicarbonate leavens the dough by releasing CO₂ around 100 °C, softening the crumb, while spice volatiles are released as the internal temperature reaches ~80 °C, defining the signature flavor profile.
